FRENCH CHOCOLATE MOUSSE

ingredients

  1. dark chocolate 180g
  2. cream 100 ml
  3. eggs 6
  4. sugar 60g

method

  • melt the chocolate in a bain-marie
  • warm up the cream
  • separate egg yolks and whites
  • once chocolate melt add warm cream into chocolate then add egg yolks mix it
  • beat egg white until gets stiff add sugar gradually
  • put egg white into chocolate mixture then fold it using scraper do not over mix
